The cuvée R.D. de Bollinger was born in 1963, when Madame Bollinger decided to release a few bottles of "Réserve 1947". The idea is to choose an old vintage, young disgorged and dosed like a Extra-Brut, to guarantee its freshness alongside powerful aromas testifying to a long vinification in oak barrels. This unique cuvée is christened Bollinger R.D. for "Récemment Dégorgé". 2007 is yet another special year for the winemakers. A mild winter favors an early start to the vegetative cycle. An early start that would be confirmed right up to the harvest, as a mild spring, rainy June and July and a hot August and Sec failed to reverse the trend. 2007 will remain one of the earliest vintages, but one of very high quality. The blend of this 2007 vintage is 70% Pinot Noir and 30% Chardonnay, from 14 crus, 91% in Grand Cru and 9% in Premier Cru. Fermentation takes place in oak barrels for over 12 years, followed by disgorgement, completed by dosage at 3g/L, and finally release 3 months later. The wine presents itself with an intense color with amber highlights. The nose is complex, initially on the richness, honey and brioche, but very quickly appear spicy notes, ginger, caraway, followed by greedy aromas of mirabelle plum and apricot Sec. The palate is lively and energetic, again combining fruitiness with white plum, woodiness through walnut and the freshness of anise. An ideal partner for spicy Asian cuisine from the Indian region, this Bollinger R.D. 2007 will also go well with poularde de Bresse with saffron.
