Description

Saint-Emilion Grand Cru Classé B The 2011 vintage is characterized by a "summer in the spring", i.e. a warm spring which led to an early bud break and a beautiful flowering. Rather cool and humid, the summer was more complicated and was marked by a heat peak at the end of August leading to an early harvest in September. The Merlot grapes were very ripe while the Cabernet Franc grapes were more fresh. Blend of the 2011 vintage: 70% Merlot Merlot, 24% Cabernet Franc, 6% Cabernet Sauvignon The color is a pretty cherry bigarreau, tinged with delicate tile reflections. The bouquet is complex and expressive, with aromas of black fruits, blackberry, woody vanilla and roasting. The attack is frank and the palate is ample and generous, with that chalky touch typical of the right bank. Carried by firm tannins of a beautiful finesse, it stretches long, revealing flavors of wild berries and peppery spices, before ending on a powerful and persistent finish. Food and wine pairing : Château Beau-Séjour Bécot 2011 will go very well with all kinds of game, whether it's a jugged hare with morels, small game or a roasted wild boar haunch. It can also be served with several cheeses: a morbier with truffles, a cantal or a mimolette. Then finish it off with a chocolate dessert such as an opera cake or with macerated fruit. Ageing potential and tasting: This wine is now ready to drink but can be kept for another five years. To do so, open the bottle at room temperature, if possible 5 to 6 hours before tasting. Decanting is recommended. The bottles should be kept in a dark cellar, lying down, at an optimal hygrometric degree of 70%.
