Description

2014 is a beautiful vintage in the Bordeaux vineyard, marked by contrasting climatic conditions. The flowering of the vines was homogeneous thanks to a sunny spring, then the summer alternated between a beautiful July and a cooler August. September and October were very nice and had warm and sunny days. The harvest was thus of very good quality. Blend of the 2014 vintage: 69% Cabernet Sauvignon, 26% Merlot, 3% Cabernet Franc, 2% Petit Verdot. The robe is a very intense dark red color, decorated with discrete tiled reflections. The nose is particularly expressive, offering aromas of very ripe black fruits, black olive, vanilla wood and cardamom. The attack is lively and elegant, the wine is rich and unctuous, supported by coated and precise tannins. It shows a controlled power, with flavors of stewed fruits, licorice and pepper that give it an invigorating freshness. The finish is long and persistent. Food and wine pairing: Chateau Lynch-Bages 2014 will be perfect with pauillac suckling lamb with baked apples, Madeira-crusted beef tenderloin, roast goose, hunter rabbit with mustard or seed-crusted leg of lamb. For a pairing with cheeses, choose uncooked pressed cheeses, such as Cantal, Edam, aged mimolette, morbier with truffles or Saint-Nectaire. For desserts, it will be perfect on an opera cake, a tiramisu or a three chocolate entremet. Cellaring potential and tasting: Chateau Lynch-Bages 2014 is a great wine made for long aging. It will be able to wait in the cellar until its apogee, which will be between 2034 and 2040. However, it can very well be tasted today. To do so, take care to place the bottle in the serving room at room temperature the night before and open it. Otherwise, open and decant the bottle at least 6 to 7 hours before tasting. The bottles will be kept in the cellar, protected from light, lying down, with an optimal hygrometric degree of 70%.
